PALANGA BESARA

PALANGA BESARA: A good add to the thursday dinner menu … will taste great with rice, ghee and green chillies as also with parathas and rotis!!!
Ingredients:
Palak (spinach) – 500gms. (washed thorughly and finely sliced)
Potato – 100 gms (cut into small pieces)
Brinjal – 1 small (cut into small pieces)
Onion – 1 medium sized, chopped.
Green chillies – 1 or 2 (chopped)
Garlic – 3 cloves
Cumin seeds (jeera) – 1 tsp.
Mustard seeds – 2 tsps + 1/4 tsp.
Bay leaf (teja patra) – 1
Badi – 6 to 8 fried pieces.
Oil – 3 tbsps.
Haldi – 1/2 tsp.
Salt to taste
Procedure:
Grind 2 tsps mustard seeds, cumin seeds and garlic to a fine paste.
Heat oil, add bay leaf and 1/4 tsp. mustard seeds. When they splutter add onions and green chillies and fry till light brown. Add potato and brinjal pieces and fry at simmer for 3 to 4 mts keeping the pan covered. Then add masala paste and stir. Then add the palak and stir. Add haldi and salt and cover and allow to cook for 10 to 12 mts. You can add some water to give it a moist texture.Then crumble the badi (biggish pieces) and add. And ofcourse serve hot!!!
