JHATPAT SHAHI TUKDA: For the ‘Shahenshahs’ of the day … our precious brothers …
Ingredients
*For the base:
4 pcs of bread with their sides cut ( you can cut them into triangles too)
2 tbsps. ghee
Fry the bread pieces in ghee till they turn golden brown and crisp. Keep aside.
( plain bakery rusks will also do if you want to reduce the fat content)
*For the rabdi:
1 1/2 cups milk
4 tbsp condensed milk
1 tbsp fresh bread crumbs
1/4 tsp cardamom (elaichi) powder
a pinch of nutmeg (jaiphal) powder
Boil milk milk till it reduces to 1/2. Remove from flame and add the condensed milk. Mix well. Then stir in the rest of the ingredients and keep aside.
*For the garnish:
1 tbsp slivered almonds (badam) and pistachios
1 to 2 edible silver leaf (varak)
Place the fried bread slices on a serving plate. Pour the hot rabdi over it. Garnish with the slivered nuts and varak and serve chilled.
